2007年 ダージリン・セカンドフラッシュ
今日はSpecialist courseのレッスン。バトラーさんのお仕事でも一番重要な紅茶のサーブでした。ティースプーンでどの茶葉でもきっちり人数分量れるようになり、ティーカップには一定量のお紅茶が淹れられるようになり、全体のテイーサーブも優雅に美しく～と話すのは、簡単。実践はとっても難しいのです。ちょっとした手際で、お湯の温度も下がりジャンピングの仕方が変わりますし、お味や水色の透明度も違う。
今日のサーブのレッスンは、マリアージュフレールのダージリン・サングマ茶園を使って何ポットいれたでしょうか。茶摘みをされている方には、申し訳ないほど、贅沢に使用しております。やはりダージリンを制すれば、すべて制することができる！というほど、繊細なお紅茶です。
Sweetsとあわせて、ティスティングしたのは、ダージリン キャッスルトン茶園 FTGFOP1 MUSCAT Second Flush 2007
ファーストフラッシュと違い、マスカテルフレーバーと力強くキレのある渋みがあるクラシカルな風味の紅茶です。水色も赤茶で明るく、とても美味しいです。しかし、ファーストフラッシュのときのような感動するほど、素晴らしいお紅茶に巡り合えた～という感覚ではありません。今年のセカンドフラッシュ、どうも私好みのお紅茶ではありません。今年のマーケットでは、Singbulli と Sungma の上質品が非常に高値で
取引されているのが注目に値しますが、全体的には昨年ほどクオリティーが良くないようです。サロンオリジナルでご用意しております、セカンドのPUTTABONG、ファーストのCASTLETON以上に私の舌をうならせてくれる、お紅茶に出会いたい～♪
レッスンが終わり、今日は渋谷のインド料理へ。体力つきました！来週の日曜日は、バレエのコンペ予選本番。初めて参加詳細のホームページをみてみたら、なんと正式名称「なかの国際ダンスコンペティション」。国際がついているではないですか～！！！69団体参加中、いくつの団体が予選通過されるかわかりませんが、私達は12名で踊ります。みんなの足をひっぱらないように、頑張ります！
